It's bake day at our house. I've heard tell that a man can't live by bread alone. I'd not argue that but I wouldn't want to live without it.
This week, we're having buttermilk loaf. Simplest recipe I know. Bread flour, yeast and buttermilk. There's no need to add salt. Be sparing if you do. Buttermilk usually contains enough salt of its own to sufficiently retard the yeast.
Six cups flour, three cups buttermilk, four-and-one half teaspoons active dry yeast. Makes three loaves. If you must have salt in your bread, don't add more than a teaspoon or your loaves will be heavy and dense.
